Can you think of a happier occasion than sharing a good meal? Nourish your mind and body with a tasty and balanced vegetarian recipe to enjoy with friends and family. As well as being delicious, carrots are rich in antioxidants and beta-carotene, making them great for healthy, beautiful skin.

Ingredients for 4 people
  • bunch of rainbow carrots 1
  • tbs white miso paste 2
  • tbs grapeseed oil 2
  • tbs honey 1
  • tbs sesame needs 2
  • small bunch of mint 1
  • cup (240 ml) of whole milk Greek yogurt for the labneh 1

This tasty, colorful summer salad is perfect for hot sunny days. This salad’s all season round ingredients help to maintain optimal energy levels. The burrata provides protein and calcium, while the tomatoes and nectarines contain vitamins and antioxidants. Olive oil supplies essential fatty acids, which are good for heart health, while the pistachios add fiber and minerals such as magnesium and iron.

Start by preparing the labneh.

The night before, pour the yoghurt into a small colander and cover with a clean cloth, attached to all four corners. Place in a cool place and leave to drain overnight.

Mix the miso with the oil and honey and coat the pre-peeled carrots with the mixture. Bake in a moderate oven for 45 minutes.

Preheat the oven to 180°C.

Place your carrots in a baking dish and bake for 45 minutes.

Serve them on a platter, first spreading the labneh, then placing the carrots on top. Sprinkle with mint leaves and sesame seeds.
