A balanced, nutrient-rich diet will help you maintain your energy levels and support your daily activities – whether that is getting ready to go back to work or finding the best spot for your beach towel.


This refreshing and delicious salad recipe brings together the tastiest summer flavors.

Ingredients to serve 2 people
  • whole burrata 1
  • large yellow tomato, cut into quarters 1
  • nectarines, cut into quarters 2
  • handfuls of Arugula 2
  • chive, thinly sliced 1
  • a lemon, thinly sliced, then chopped 1/2
  • capers 6
  • pistachio kernels, lightly toasted
  • cup (50 ml) of extra virgin olive oil 1⁄4
  • the juice of 1 lemon 1
  • tablespoon of fresh basil 1

This tasty, colourful summer salad is perfect for hot sunny days. This salad’s all season round ingredients help to maintain optimal energy levels. The burrata provides protein and calcium, while the tomatoes and nectarines contain vitamins and antioxidants. Olive oil supplies essential fatty acids, which are good for heart health, while the pistachios add fiber and minerals such as magnesium and iron.

Finely slice the tomatoes and nectarines and place on a large, flat plate.

Add the arugula, chopped chives and capers.

Make a salad dressing by combining the olive oil, lemon juice and fresh basil, then season the mixture.

Carefully break the burrata in half and place in the center of the plate. Before serving, sprinkle with crushed pistachios to add crunch and a gourmet touch.
